This is the method of cooking where the fish is either placed on a grill or placed under a driller. In a trivial saucepan bring the fish stock to the boil and cook the baby vegetables in the hot stock. 4.Add fish fillets and top with vegetables. To make the mirepoix, heat the olive oil in a pan until smoking hot. The longer and slower the cooking, the more vegetable flavors will enhance the flavor of the fish. Combine the salt, sugar and pepper and rub the fish flesh with the mixture. Store the fish in the refrigerator for two days.2.Turn at least twice a day and baste with juices that are formed. Defrost the butter in a important saucepan and increase chopped onion. Blend breadcrumbs, parsley, butter, dried herbs, lemon rind and mix well. Season fish fillets with salt, pepper and fish seasoning.2. Store drained fish slices in a deep dish and conceal with onion mixture.
